Besides, moving everything to my new website, I have been busy shooting. This is one of those perfect share plates, that you will eat all the time. Perfect when the weather gets warm, even it rains a lot in Scotland! this is a great low waste, beautiful easy recipe you can make really quickly and just in time for the British Tomato season!

Ingredients:

70-80g goats cheese

2 tbsp of greek yogurt

3-4 very ripe vine tomatoes

1/2-1 red medium chili chopped ( use as much as desired)

@corningseasalt Sea salt \black pepper

1-2 garlic cloves grated

Herbs like basil/ oregano/thyme

1-2 tsp of balsamic

A generous drizzle of evoo

1 jar / can of large chickpeas I used (https://boldbeanco.com) but any chickpeas will work.

Method:

Mix the goats cheese and greek yogurt together in a bowl. Set aside.

To make the tomato paste, grate all the tomatoes in a bowl, then add the grated garlic, basil ,sea salt, pepper, balsamic, drizzle some evoo -taste then drain the chickpeas and toss them through. Serve on the creamed goats cheese, add all the basil and more herbs on top. Drizzle with more extra virgin olive oil and eat with bread.
